Helen The Pacific: “Well balanced and a delight to drink”

Frederic, of the blog Cocktail Virgin Slut, posted a review of a drink I concocted called Helen The Pacific, which itself is based on Jeff Berry‘s “Hell in the Pacific” (basically: 151 Demerara, lime juice, maraschino, and grenadine).

I altered Jeff’s recipe to fit the taste buds of my wife Helen, and in doing so, created Helen The Pacific—recipe below.

3/4 rhum neisson
3/4 lemonhart 80
3/4 lime juice
1/2 maraschino liqueur
1/4 grenadine
1/4 velvet falernum
1/4 allspice dram
1/4 simple syrup

Helen The Pacific Recipe

3/4 Rhum Neisson Eleve
3/4 lemonhart 80
3/4 lime juice
1/2 maraschino liqueur
1/4 grenadine
1/4 velvet falernum
1/4 allspice dram
1/4 simple syrup

 

Jeff’s “Hell in the Pacific” recipe calls for 1.5 of the 151; I divided that measurement over two rums: an agricole (Rhum Neisson Eleve) and a Demerara 80. I love the taste of Demeraras but wanted to tone down the fire. And who can say no to an agricole? You can try it with the Neisson Blanc if you don’t have the gold, but without the gold, the rums’ tastes won’t be nearly as present.  Helen is a big fan of tastes like cinnamon, clove, allspice, etc; and so I added Velvet Falernum and Allspice Dram to give the drink a little more flavor. The simple syrup helps to sweeten it up a bit, but is optional if your maraschino and grenadine are already sweet. Stay away from Fee’s falernum because that stuff is just way too sweet.

Anyways, here’s what Frederic has to say about it:

Helen the Pacific had the citrus, allspice, and clove flavors from the lime, dram, and falernum in the front part of the sip. The Maraschino notes became more evident in later sips and followed the citrus and spice wave. Surprisingly, the rum flavors were more elusive which is odd since rhum agricole is often not that subtle. Overall, it was well balanced and a delight to drink…
